Spiked Cucumber-Mint Lemonade Anyone?

Looking for a refreshing, low-calorie cocktail this summer that's simple to make but very delicious? Then look no further than my Cucumber Mint Lemonade!


I am no bartender but I love to whip up a quick cocktail for date-night at home with hubby or when I am entertaining friends or family. When I am mixing things in my cocktail shaker, I feel like I'm in a scene of Coyote Ugly (in my head LOL). It's also super validating when people enjoy the drinks I make... I'll tell you about my Cuban Mojito in a later post :).


The summer months are the perfect time to have a handy recipe back pocket for those hot summer days, This recipe is also a great one to make in a pitcher and there isn't a ton of measuring! Ha.


So, here goes..... you'll want to grab the following items to make a pitcher of my spiked cucumber-mint lemonade:

  1. 3-4 lemons (or limes if you wanna get snazzy ☺️)

  2. A bunch of mint sprigs

  3. A bottle of Tropicana Simply Lemonade for the purposes of this recipe, I chose the light lemonade... remember, I said low calorie right!

  4. A bottle of Kettle One Botanical Botanical Cucumber Mint

  5. A few slices of cucumber

  6. Ice

  7. 32oz Pitcher

First - you want to fill a pitcher up with about 24 ounces of lemonade. Then grab a few sprigs of lime and twist the stems and leaves to release the minty flavor for the lemonade. Drop in a few slices of cucumber and a several slices of lemon or lime and let that marinate.


Once you have the lemonade and garnishes in your pitcher, now it's time to add in the good stuff..the Ketel One! Pour, pour, pour... Now, here's where you should use your judgment. You can determine how strong you want your drink to be and pour in that amount. I usually pour in a ratio of about 1:3, vodka to lemonade. So if you put in 24oz of lemonade, I'd add in about 8 oz of vodka.


Give it a stir then add some ice and voila! Your spiked lemonade is ready to pour.


Now if you want to get super fancy (insert bartending scene from Coyote Ugly), you'll want to prepare a few rocks glass with ice, slice a cucumber and put it on the rim of the glass with a lime wedge... pour in your lemonade and top with a mint sprig!


Trust me, this guilt free, refreshing cocktail is sure to please! Your friends will want you to make it for every event.
